Ray, There's a columnist Susan Maltby who's in one of thr weekly magazines, who writes about coin storage, chemical reactions and such. I don't know if there's an acidity scale for wood or not, but I've always heard that the coin cabinets of the old days were made out of walnut because it didn't react with the coins... I hope I recalled that correctly. It might be worth the effort to send Suisan an email...
