Ray,
Following in my Dad's footsteps, our bread has to sit out overnight to dry before putting the stuffing together. I'm about to take on that task now. The cranberries are made the night before, however. My mother, for forty years,s tried to duplicate my Father's mother's cranberries. Mt father insisted they were made from cranberries, sugar, and water; nothing else - no pectin or other thickening agent. All my life growing up, the cranberry sauce was tasty, but my mother could not get them to set up to perfection. Finally, at a Thanksgiving dinner late in life, my mother mused aloud about the cranberries and my Aunt chimed in, "That's easy, she always used a little pectin."
